We threw Zander's 'Welocome to the World party last weekend so I made this; the rainbow party version of the White Chocolate Dream tart I made a few weeks ago.

I made it three times as large, with each layer a different colour; purple, yellow, then red.

The pastry was much better this time, practise clearly making perfect and it was a big hit amongst our friends.

Tempting Tuesday: Rice Crispy Sushi

You may have noticed by now how obsessed I am by sushi and yes, although I hate fish in all forms, I am finding all the ways I can to make the super cute food regardless. 

This version is made using lovely gooey rice crispy cake and sweets. 

 

Melt 25g of butter with 100g of marshmallows in a pan, then pour over 100g of rice crispies & mix well. 

 

After a few failed attempts to flatten it out, I finally managed it by putting it in between two Teflon sheets (can't recommend them enough) and going over the top gently with a rolling pin. If you're too rough, you'll just crush the crispies.

 

I laid rainbow strips across the top & trimmed the rice crispy accordingly. 

I would recommend making the rice crispy cake shorter than the strips because it'll squish into place better. 

 

I put a strawberry cable in the centre and rolled it up. This is possibly the trickiest thing I've ever attempted but I got there eventually after much rolling and squashing. 

 

Then it's the joyful slicing up. I love this bit.

 

 

Not bad for a first attempt.

For Bean's birthday last month, we had a pizza party and everyone made their own pizza (except Mr Strawberry, who had his made by the one kid at the party who can't stand pizza).

My experience with some nasty pizza bases made me reluctant to buy them for this purpose, but I had a bit of a brain wave on party food shopping day and remembered that as a teenager, one of my favourite snacks was a pitta bread, covered in tomato puree and cheese and grilled lightly.

I covered each pitta in a mixture of tinned tomato puree and passata with basil.

Our choice of toppings included; onion, ham, salami, cherry tomatoes, chicken, red pepper, pineapple, sweetcorn, mushrooms and of course, mozzarella.

It was lovely letting the kids choose what they wanted and completely delicious.

 

We made more for dinner that night with the leftovers and seriously, we'll be making them again.

I made this for my nephew's first birthday yesterday, using 'up-cycled' cards. I'm really pleased with it, it's so cute & cool.
